Cabernet Franc was one of the original grape varietals planted in the Poplar Grove Vineyards. An immediate favourite from the first vintage in 1995, because of its intense fruit quality and ripe velvety tannins. The Cabernet Franc berries from each vineyard block were crushed separately and cold soaked for two days before fermentation. Once blended the wines were aged in 30% new French oak and a combination of two and three year old French oak barrels for 21 months. This age worthy wine was further developed in bottle for 12 prior to release.
